    Prepare the Pork

    Season the pork shoulder with salt and black pepper. Heat olive oil in a large pot over medium-high heat and sear the pork on all sides until browned. Remove the pork and set aside.

    Sauté Aromatics

    In the same pot, add the minced garlic and chopped onion. Sauté until the onion is translucent, about 3-4 minutes.

    Add Apples

    Add the sliced apples to the pot and cook for another 2-3 minutes until slightly softened.

    Make the Glaze

    In a bowl, mix together the soy sauce, maple syrup, and chicken broth. Pour this mixture into the pot.

    Braise the Pork

    Return the seared pork to the pot and add fresh thyme. Bring to a simmer, then cover and reduce heat to low. Let it braise for about 2 to 3 hours until the pork is tender.

    Serve

    Once the pork is tender, remove it from the pot and let it rest for a few minutes before slicing. Serve with the apple and glaze from the pot.
