Preheat the Oven

Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.

Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

Beat Eggs

In another bowl, beat the eggs until frothy. Then add lemon juice, vegetable oil, and vanilla extract, mixing until well combined.

Combine Wet and Dry

Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.

Add Poppy Seeds and Zest

Gently fold in the poppy seeds and lemon zest into the batter.

Baking

Pour and Bake

Pour the batter into the prepared loaf pan and smooth the top. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted in the center comes out clean.

Cool

Once baked, remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
