    Prepare the Potatoes

    Peel and grate the Russet potatoes into a bowl. Rinse the grated potatoes under cold water to remove excess starch, then drain well.

    Cook the Hash Browns

    In a large skillet, heat the vegetable oil over medium-high heat. Add the grated potatoes to the skillet, spreading them evenly. Season with salt and black pepper. Cook for about 5-7 minutes, or until the bottom is golden brown. Flip and cook the other side until crispy. Remove from heat and set aside.

    Cook the Grits

    In a medium saucepan, bring the water to a boil. Stir in the grits and reduce the heat to low. Cook for about 20-25 minutes, stirring occasionally until thickened. Add butter, cheddar cheese, salt, and pepper. Stir until the cheese is melted.

    Prepare the Grit Cake Mixture

    In a bowl, mix the cooked grits with the egg and cornmeal until well combined.

    Fry the Grit Cakes

    In a skillet, heat the vegetable oil over medium heat. Pour the grit mixture into the skillet to form cakes, using about 1/4 cup per cake. Fry for about 4-5 minutes on each side, or until golden brown. Remove from the skillet and drain on paper towels.
