Method
Preparing the Hollandaise Sauce

Step 1: Melt the Butter
In a small saucepan, melt the unsalted butter over low heat. Allow it to cool slightly.

Step 2: Whisk the Egg Yolks
In a heatproof bowl, whisk together the egg yolks, lemon juice, Dijon mustard, and a pinch of salt.

Step 3: Cook the Sauce
Place the bowl over a pot of simmering water (double boiler method) and whisk continuously while slowly drizzling in the melted butter until the sauce thickens. Season with salt and white pepper to taste.
Sautéing the Vegetables

Step 1: Poach the Eggs
Fill a pot with water and bring it to a gentle simmer. Crack each egg into a small bowl and gently slide them into the water, poaching for about 3-4 minutes until the whites are set but the yolks remain runny.

While the eggs are poaching, split and toast the English muffins until golden brown.
