Method
Preparation of Bread
- 1
Preheat and Slice
Preheat your oven to 400°F (200°C). Slice the baguette into 1/2 inch thick slices on a diagonal to create a larger surface area for toppings.
- 2
Toast the Baguette
Place the sliced baguette on a baking sheet. Drizzle with a little olive oil and toast in the oven for about 5-7 minutes, or until golden brown and crispy. Keep an eye on them to prevent burning.
Preparation of Topping
- 3
Chop the Tomatoes
While the bread is toasting, dice the tomatoes into small pieces. You can remove the seeds if you prefer a less watery topping.
- 4
Prepare the Basil
Rinse the fresh basil leaves under cold water, pat them dry with a paper towel, and then roughly chop them.
- 5
Mix the Topping
In a mixing bowl, combine the diced tomatoes, chopped basil, olive oil, salt, and black pepper. Mix gently until everything is well coated.
Assembly
- 6
- 7
Add Tomato Mixture
Spoon the tomato and basil mixture generously over the smoked salmon on each toast.
- 8
Serve
Drizzle a little extra olive oil on top if desired. Serve immediately as an appetizer or snack.
