    Marinate the Chicken

    In a large bowl, combine buttermilk and hot sauce. Add chicken thighs and ensure they are fully submerged. Cover and refrigerate for at least 2 hours or overnight for best results.

    Prepare the Breading

    In a shallow dish, whisk together flour, paprika, cayenne pepper, garlic powder, salt, and black pepper.

    Fry the Chicken

    Heat vegetable oil in a deep skillet over medium-high heat. Remove chicken from the marinade and dredge in the flour mixture, shaking off excess. Fry the chicken for about 5-7 minutes per side until golden brown and cooked through (internal temperature should reach 165°F).

    Make the Hot Oil

    In a small bowl, combine cayenne oil with additional cayenne pepper if desired for extra heat. Drizzle this mixture over the fried chicken while still hot.

Pimiento Cheese

    In a medium bowl, combine shredded cheddar cheese, softened cream cheese, mayonnaise, chopped pimentos, garlic powder, onion powder, salt, and black pepper. Mix until well blended and creamy.

    Cover the pimiento cheese mixture and refrigerate for at least 30 minutes to allow flavors to meld.

Sandwich Assembly

    Toast the Buns

    Lightly toast the brioche buns on a skillet or under a broiler until golden.

    Spread a generous amount of pimiento cheese on the bottom half of the toasted bun. Top with a piece of fried chicken, a handful of spring mix, a slice of tomato, and drizzle with aioli. Place the top bun on and press down slightly.
