Method
Marinate Chicken
- 1
Prepare the Marinade
In a large bowl, combine the buttermilk, hot sauce, salt, black pepper, garlic powder, and onion powder. Whisk until well mixed.
- 2
Marinate the Chicken
Add the chicken pieces to the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.
Prepare the Chicken Breading
- 3
Make the Breading Mixture
In another bowl, mix the flour, cornstarch, paprika, cayenne pepper, additional salt, and black pepper until combined.
Fry the Chicken
- 4
- 5
Bread the Chicken
Remove chicken from the marinade, allowing excess to drip off. Dredge each piece in the breading mixture, ensuring it is fully coated.
- 6
Fry the Chicken
Carefully place the breaded chicken pieces into the hot oil in batches, without overcrowding. Fry for 12-15 minutes or until golden brown and cooked through (internal temp of 165°F).
- 7
Drain and Rest
Remove the chicken from the oil and place on a wire rack or paper towels to drain excess oil. Let it rest while you prepare the waffles.
Make the Waffles
- 8
Mix the Dry Ingredients
In a large bowl, whisk together the flour, baking powder, sugar, and salt.
- 9
- 10
Combine and Cook
Pour the wet mixture into the dry ingredients. Stir until just combined, being careful not to overmix. Preheat your waffle iron and pour in the batter according to the manufacturer's instructions.
Prepare the House Syrup
- 11
Heat the Syrup
In a small saucepan, gently heat the maple syrup and butter over low heat until the butter is melted and the mixture is combined.
Serve
- 12
Plate and Serve
Serve the fried chicken on top of a waffle, drizzled with the house syrup. Enjoy!
