    Prepare the Ingredients

    Chop the vegetables (spinach, tomatoes, onions, peppers, mushrooms) into bite-sized pieces. If using any meats, dice the sausage, bacon, ham, steak, or shrimp into small pieces.

    Whisk the Eggs

    In a mixing bowl, crack the eggs and whisk them together until well combined. Add salt and black pepper to taste.

    Cook the Meats (if using)

    In a non-stick skillet, heat 1 tablespoon of olive oil or butter over medium heat. Add the diced sausage, bacon, ham, steak, or shrimp, and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add another tablespoon of olive oil or butter. Add the chopped onions and peppers, and sauté for 2-3 minutes until they become tender. Then, add the spinach and mushrooms, cooking for another 2-3 minutes or until the spinach wilts.

    Cook the Omelet

    Pour the whisked eggs into the skillet with the sautéed vegetables. Allow the eggs to set for about 1-2 minutes, then gently lift the edges with a spatula to allow uncooked egg to flow underneath. Once the top is still slightly runny but mostly set, sprinkle your choice of cheese over one half of the omelet along with the cooked meats (if using).

    Fold and Serve

    Carefully fold the omelet in half over the cheese and meats. Cook for another minute until the cheese is melted and the omelet is cooked through. Slide onto a plate and serve hot.
