Duck Confit Ingredients

Method

Preparation and Cooking Instructions

1

Prepare the Duck Legs

Start by rinsing the duck legs under cold water and pat them dry with paper towels. Place them in a large bowl.

2

Season the Duck

Sprinkle the salt evenly over the duck legs. Add the crushed garlic cloves, thyme, and black peppercorns. Rub the seasoning into the meat thoroughly. Cover the bowl with plastic wrap and refrigerate for at least 24 hours, or up to 48 hours for better flavor.

3

Rinse and Dry

After the marinating period, remove the duck legs from the refrigerator. Rinse off the salt and seasoning under cold water, then pat them dry with paper towels.

4

Cook the Duck Legs

In a large oven-safe pot or Dutch oven, melt the duck fat over low heat. Once melted, carefully place the duck legs into the pot, ensuring they are fully submerged in the fat.

5

Slow Cook

Cover the pot with a lid and cook the duck legs on low heat for 2 to 3 hours. The duck should be tender and easily pull away from the bone.

6

Crisp the Skin (Optional)

If you prefer crispy skin, remove the duck legs from the fat and place them on a baking sheet. Broil them in the oven for 5-10 minutes until the skin is crispy and golden brown.

7

Serve

Serve the duck confit hot, with your choice of sides like roasted vegetables or a fresh salad.
