Rinse Crawfish

In a large bowl, fill with water and add salt. Stir to dissolve the salt. Add the live crawfish and let them soak for about 30 minutes to purge any mud or debris.

Drain Crawfish

After soaking, drain the crawfish and rinse them under cold running water to remove any remaining salt and impurities.

Cooking the Crawfish

Boil Water

In a large pot, bring 5 gallons of water to a rolling boil over high heat.

Add Seasonings

Once the water is boiling, add the Cajun seasoning, lemon slices, minced garlic, quartered onion, and bay leaves. Stir well to combine.

Add Potatoes and Sausage

Add the halved red potatoes and sliced andouille sausage to the pot. Boil for about 15 minutes until the potatoes are tender.

Add Corn and Crawfish

Add the corn pieces and prepared crawfish to the pot. Stir gently and return to a boil. Boil for an additional 3 to 5 minutes until the crawfish turn bright red and are cooked through.

Remove from Heat

Turn off the heat and let the mixture sit for about 5 minutes to allow the flavors to meld.

Serve

Carefully drain the pot and serve the crawfish, potatoes, corn, and sausage on a large platter or newspaper-covered table. Enjoy!
