Crepe Preparation

Make the Crepe Batter
In a large mixing bowl, whisk together the flour, eggs, milk, melted butter, vanilla extract, and a pinch of salt until smooth. Let the batter rest for at least 30 minutes for the best texture.

Cook the Crepes
Heat a non-stick skillet over medium heat. Lightly grease the pan with butter or oil. Pour about 1/4 cup of batter into the skillet, tilting the pan to spread the batter evenly. Cook for about 1-2 minutes until the edges start to lift, then flip and cook for another 1-2 minutes. Repeat with remaining batter.

Prepare the Filling
Spread a generous amount of Nutella on one half of each crepe. Slice the bananas and arrange them over the Nutella. Fold the crepe in half, then in half again to form a triangle. Serve warm topped with whipped cream.

Scramble the Eggs
In a bowl, whisk together the eggs, salt, and pepper. In a non-stick skillet over medium heat, scramble the eggs until just set and fluffy. Remove from heat.

Assemble the Savory Crepes
Lay out the cooked crepes and place a portion of scrambled eggs on one half. Top with slices of country ham and sprinkle with cheddar, Swiss, and Parmesan cheese. Fold the crepe over and serve warm.
