Method
Prepare Pancake Batter

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Whisk them together until evenly mixed.

Combine Wet Ingredients
In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.

Combine Wet and Dry
Pour the wet ingredients into the dry ingredients. Gently mix until just combined. Do not overmix; a few lumps are okay.
Cook Pancakes

Preheat Skillet
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.

Cook Pancakes
Cook the pancakes until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.

Repeat Cooking
Continue until all the batter is used, adjusting the heat as necessary to prevent burning.
Prepare Toppings

Strawberry & White Chocolate
In a small bowl, mix sliced strawberries with white chocolate chips and a sprinkle of powdered sugar.

Peaches & Cream
In another bowl, combine the sliced peaches with whipped cream and brown sugar.
Serve

Plate Pancakes
Stack three pancakes on a plate. Top one stack with the strawberry & white chocolate mixture and the other with the peaches & cream.
