Method
Biscuits
- 1
Prepare the Dough
In a large bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Whisk together until well combined.
- 2
Cut in the Butter
Add the cold, unsalted butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
- 3
Add Buttermilk
Make a well in the center of the mixture and pour in the buttermilk. Stir gently until just combined, being careful not to overmix.
- 4
Shape the Biscuits
Turn the dough out onto a floured surface and gently knead it a few times until it comes together. Pat the dough into a 1-inch thick rectangle. Use a biscuit cutter to cut out biscuits.
- 5
Bake the Biscuits
Preheat your oven to 425°F (220°C). Place the biscuits on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until golden brown.

- 6
Cook the Sausage
In a large skillet over medium heat, cook the breakfast sausage until browned and cooked through, breaking it up with a spoon as it cooks.
- 7
Make the Roux
Sprinkle the flour over the cooked sausage and stir to combine. Cook for 1-2 minutes until the flour is lightly browned.
- 8
Add Milk
Gradually pour in the milk, stirring constantly to prevent lumps. Continue to cook until the gravy thickens, about 5-7 minutes.
- 9
Season the Gravy
Stir in the salt, black pepper, and red pepper flakes to taste. Cook for an additional minute to combine the flavors.
