Prepare the Chicken

Marinate the Chicken
In a bowl, combine olive oil, cajun seasoning, salt, and black pepper. Add the chicken breasts, coat well, and let marinate for at least 30 minutes.

Prepare the Vegetables

Slice the Vegetables
While the chicken is marinating, slice the red and green bell peppers and yellow onion into thin strips.

Assemble the Sandwich

Prepare the Ciabatta Rolls
Slice the ciabatta rolls in half and lightly toast them if desired.

Build the Sandwich
On the bottom half of each ciabatta roll, layer the sliced blackened chicken, sautéed peppers and onions, and top with slices of cheddar cheese. Spread a generous amount of remoulade sauce on the top half of the roll and close the sandwich.

Fry the Chips
Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Fry the potato slices in batches until golden and crispy, about 3-5 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt to taste.
