Method

Prepare the Chicken

  1. 1

    Marinate the Chicken

In a bowl, combine olive oil, cajun seasoning, salt, and black pepper. Add the chicken breasts, coat well, and let marinate for at least 30 minutes.

  2. 2

    Cook the Chicken

Heat a grill or skillet over medium-high heat. Cook the marinated chicken for about 6-8 minutes per side until cooked through and blackened. Remove from heat and let rest before slicing.

Prepare the Vegetables

  1. 3

    Slice the Vegetables

While the chicken is marinating, slice the red and green bell peppers and yellow onion into thin strips.

  2. 4

    Sauté the Vegetables

In the same skillet used for the chicken, add a little olive oil if needed. Sauté the sliced peppers and onions until they are softened and slightly caramelized, about 5-7 minutes.

Assemble the Sandwich

  1. 5

    Prepare the Ciabatta Rolls

Slice the ciabatta rolls in half and lightly toast them if desired.

  2. 6

    Build the Sandwich

On the bottom half of each ciabatta roll, layer the sliced blackened chicken, sautéed peppers and onions, and top with slices of cheddar cheese. Spread a generous amount of remoulade sauce on the top half of the roll and close the sandwich.

Prepare the Housemade Chips

  1. 7

    Slice the Potatoes

Wash and thinly slice the potatoes using a mandoline or a sharp knife.

  2. 8

    Fry the Chips

Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Fry the potato slices in batches until golden and crispy, about 3-5 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt to taste.
