Prepare and toast rolls
Preheat oven to 180°C (350°F). Split the sub rolls lengthwise without cutting all the way through so they open like a book. Brush the inside lightly with olive oil and spread softened butter on the cut surfaces. Place rolls cut-side up on a baking sheet and toast in the oven for 6–8 minutes until lightly golden and slightly crisp. Remove and set aside.

Assemble meats and cheese
While rolls toast, layer the deli meats on a clean board: divide the turkey, ham, and salami between the two rolls (approximately half of each per sandwich). Fold or overlap slices so they sit evenly in the rolls. Top each stack with two slices of provolone cheese (one per roll slice) so cheese covers the meat.

Melt cheese slightly (optional)
If you prefer melted cheese, return the filled rolls to the oven for 1–2 minutes just until cheese softens—watch closely to avoid over-toasting.

Prep vegetables
Wash and dry the romaine lettuce; chop or tear into bite-sized pieces to yield about 2 cups. Slice tomato into 4–6 thin rounds and divide between the two sandwiches. Thinly slice half a cucumber lengthwise or into rounds and divide between sandwiches. Thinly slice 1/4 red onion into rings; separate and distribute. Cut a quarter of the green bell pepper into thin strips and divide. Place 2 pepperoncini slices and 2 pickle slices on each sandwich.

Make sandwich dressing
In a small bowl, combine mayonnaise, yellow mustard, and red wine vinegar. Whisk until smooth. Season with dried oregano, salt, and black pepper and taste; adjust seasoning as desired.

Assemble sandwich
Open each toasted roll. Spread half of the dressing mixture evenly on the bottom half of each roll and the remaining half on the top half. On the bottom half, place the meat-and-cheese stack (if you warmed cheese, place immediately so it stays warm). Top with the prepared lettuce, tomato slices, cucumber, red onion, green pepper, pepperoncini, and pickles in even layers. Close the sandwich and press gently to compact.

Slice each sandwich in half diagonally if desired. Serve immediately with extra napkins and optional chips or a side salad.
