    Prepare and score the fish

    Rinse the whole snapper under cold water and pat dry thoroughly with paper towels. Using a sharp knife, make 3 to 4 diagonal cuts through the skin and flesh on each side (about 1/2-inch deep). This helps the marinade and heat penetrate evenly.

    Place the fish on a rimmed tray. Rub the lime juice all over the outside, inside the cavity and into the slashes. Sprinkle sea salt, black pepper and ground allspice evenly over and into the cuts and cavity.

    Stuff the cavity with sliced scallion, thyme sprigs, minced garlic and the whole Scotch bonnet (leave whole for flavor and to reduce heat; pierce once if you want more heat). Let the fish marinate 20–30 minutes at room temperature or up to 2 hours refrigerated. If refrigerated, bring to room temperature for 20 minutes before frying.

Coating & Flour

    While the fish is marinating, combine all-purpose flour, cornstarch, turmeric, paprika, salt and black pepper in a shallow dish or baking sheet. Whisk well so color and seasonings are evenly distributed.

    Dredge the marinated fish in the seasoned flour mixture, pressing lightly so the flour adheres into the slashes and over the whole fish. Shake off excess flour and set the fish on a rack for 5–10 minutes to allow the coating to set; this helps reduce splatter during frying.

Frying & Garnish

    Choose a deep skillet, sauté pan or wok large enough for the fish. Pour enough vegetable oil so it reaches about halfway up the side of the fish for shallow frying (or 1/2–3/4 of the way for partial submersion). Heat the oil over medium-high heat to 180°C (350°F). If you don't have a thermometer, a cube of bread should brown in about 45–60 seconds.

    Reduce heat slightly so the oil is steady but not smoking. Carefully lower the fish into the oil using tongs and a spatula to support it; avoid dropping. Fry the fish 6–8 minutes on the first side until the coating is golden and crisp. To prevent sticking, do not move the fish in the first few minutes.

    Gently turn the fish using two spatulas or tongs and a slotted spoon to support the body. Fry the second side 6–8 minutes, adjusting heat to maintain a steady sizzle. Cook time will depend on fish thickness; total frying time for a 1 kg snapper is typically 12–16 minutes or until the internal flesh at the thickest part is opaque and flakes easily with a fork (internal temperature about 63°C / 145°F).

    If the tail or fins brown much faster than the body, reduce heat and shield them with a small piece of foil to prevent burning while the center finishes cooking.

    Remove the fish carefully to a wire rack set over a tray or to a plate lined with paper towels to drain briefly. Let rest 2–3 minutes.

    Transfer the fish to a serving platter. Garnish with chopped cilantro or parsley, thinly sliced onion and lime wedges. Serve immediately with rice, fried plantains or a simple salad.
