Buttermilk Marinade

In a large bowl, whisk together the buttermilk, hot sauce, garlic powder, onion powder, paprika, 1 tsp salt, and 1/2 tsp black pepper until smooth.

Pat the chicken pieces dry with paper towels. Season lightly with the 2 tsp salt and 1 tsp black pepper reserved for seasoning, rubbing into the skin and crevices.

Submerge the seasoned chicken in the buttermilk mixture, cover, and refrigerate for at least 4 hours, preferably overnight. For best results, turn once halfway through to ensure even marination.
Flour Coating

In a large shallow bowl or rimmed baking sheet, whisk together the all-purpose flour and cornstarch. Add the paprika, cayenne, garlic powder, onion powder, dried thyme, dried oregano, 2 tsp salt, and 1 tsp black pepper. Mix thoroughly so the spices are evenly distributed.

Set up a breading station: 1) flour coating, 2) egg wash (if using), 3) reserved flour coating again for double-dip. If you prefer a single-dip, skip the second flour step.

Remove chicken from the refrigerator. Let excess marinade drip off the pieces, but do not wipe them dry completely—some cling is desired for adhesion.

For each piece: dredge first in the seasoned flour, pressing the flour into the surface to form a thick coating. If using egg wash, dip into the egg mixture, let excess drip, then return to the flour for a second coat. Place coated pieces on a wire rack and let rest 10–15 minutes; this helps the crust adhere and sets a tacky surface.

Prepare egg wash
Whisk the 2 eggs with 2 tablespoons milk or water until smooth in a shallow dish. Use as the middle step for a thicker, crunchier crust.
Frying

Pour oil into a deep heavy-bottomed pot or deep fryer to a depth of about 3–4 inches (enough to cover most of the chicken pieces). Heat oil over medium-high heat to 325°F (163°C) for dark meat; adjust to 350°F (177°C) for smaller pieces or if pan is shallow. Use a thermometer for accuracy.

Working in batches so you don't overcrowd the pot, carefully lower 3–4 pieces into the hot oil skin-side down. Fry at 325°F (163°C) for about 15–18 minutes for thighs and drumsticks (internal temp 175–180°F / 79–82°C). If you started at 350°F for smaller pieces, check at 12–15 minutes. Turn pieces occasionally for even browning.

When pieces are golden brown and an instant-read thermometer inserted into the thickest part (avoiding bone) reads 175–180°F (79–82°C), remove to a wire rack set over a sheet pan to drain. Rest for 5 minutes; internal temp will rise slightly.

If crusts darken too quickly before chicken is cooked through, lower the oil temp by 10–15°F and continue frying more slowly.
