Activate and mix
In a large bowl combine warm water (about 105–115°F / 40–46°C), instant yeast and sugar. Stir and let sit 5 minutes until foamy. Add olive oil, flour and salt. Mix with a spoon until a shaggy dough forms.

Knead
Turn the dough onto a lightly floured surface and knead 8–10 minutes until smooth and elastic. Alternatively, use a stand mixer with dough hook on medium speed for 6–7 minutes.

Shape
Punch down the risen dough and turn onto a lightly floured surface. For a large Pizza Hut-style pan pizza, press or roll dough to fit a 12-inch round or rectangular deep-dish pan (lightly oiled and dusted with cornmeal). If you prefer hand-tossed, shape to a 12-inch thin round and transfer to a pizza peel or baking tray dusted with cornmeal.

Combine and simmer
While dough rises, combine tomato purée, tomato paste, olive oil, minced garlic, dried oregano, dried basil, salt, black pepper and sugar (if using) in a small saucepan. Bring to a gentle simmer over medium-low heat and cook 8–10 minutes stirring occasionally until slightly reduced and thickened. Taste and adjust seasoning. Let cool to room temperature before spreading on dough.

Assemble
Preheat oven to 475°F (245°C) with a pizza stone or inverted baking sheet inside if available. Brush the shaped dough edges lightly with 1 tbsp olive oil. Spread an even layer (about 1/2 to 3/4 cup) of the cooled sauce over the dough, leaving a 1/2–1 inch rim. Sprinkle 1½ to 2 cups shredded mozzarella evenly over the sauce. Arrange pepperoni slices over the cheese, then scatter sliced bell pepper, onion and olives as desired. Finish with grated parmesan (optional) and a light sprinkle of dried oregano or Italian seasoning.

Slide pizza onto the hot stone or place pan on the preheated baking sheet. Bake 10–14 minutes, rotating halfway through, until crust is golden-brown and cheese is bubbling and lightly browned.

Rest and serve
Remove pizza from oven and let rest 3–5 minutes. If using the buttery edge option, brush the crust with the melted butter mixture now. Sprinkle red pepper flakes if desired. Slice into 8 slices and serve hot.
