Prep rolls

Slice each hero roll lengthwise, leaving a small hinge if you prefer. Lightly toast rolls under a broiler or in a skillet for 1–2 minutes until just golden (optional) and set aside.

Make the sandwich dressing: in a small bowl combine the mayonnaise, red wine vinegar, olive oil and dried oregano. Whisk until smooth and season to taste with salt and pepper. If you like heat, fold in the hot cherry pepper relish.

Layer meats and cheeses on a cutting board in the order you prefer. For even distribution across 4 sandwiches use about 2 oz turkey, 2 oz ham and 2 oz provolone per roll. If using additional American/cheddar, add 1 oz per sandwich.

If you prefer warm melted cheese, stack meats and cheese, place on an oven-safe tray and heat under broiler for 30–60 seconds just until cheese softens, then remove carefully.

Spread roughly 1½ tablespoons of the sandwich dressing on both cut sides of each roll (about 3 tbs total per sandwich).

On the bottom half of each roll layer: a portion of the meat mixture, then cheese. Top with shredded lettuce (about ½ cup), tomato slices (3–4 thin slices), red onion (a few rings), and dill pickle slices.

Season tomato and lettuce lightly with salt and freshly ground black pepper. Add optional bacon and peppers if using.

Close the sandwich gently, press down to compact slightly, and cut in half. Serve immediately.
