Prepare and dry
If not pre-sliced, slice cleaned calamari tubes into 1/2-inch rings and leave tentacles whole. Pat all pieces thoroughly dry with paper towels. Drying is essential so the breading adheres and the oil doesn't spatter.

Mix dry breading
In a shallow wide bowl or rimmed baking sheet, whisk together 1 cup all-purpose flour, 1/2 cup cornstarch, 1/2 cup fine breadcrumbs (if using), 1/2 tsp baking powder, 1 tsp paprika, 1/2 tsp garlic powder, 1 tsp salt, and 1/2 tsp black pepper until evenly combined.

Prepare egg wash (optional)
If you prefer a slightly thicker, crispier coating, beat 1 large egg with 2 tbsp cold water in a separate shallow dish. Otherwise you can dredge calamari directly in the dry mix for a lighter coating.

Working in batches (to avoid crowding), toss a portion of the calamari first in the egg wash (if using), letting excess drip off, then dredge thoroughly in the dry mix, pressing lightly so the coating adheres. Shake off excess flour before frying.

Heat oil
Pour about 3–4 cups neutral oil into a heavy-bottomed pot or deep skillet (oil depth ~2 inches). Heat over medium-high until oil reaches 350°F (175°C). If you don't have a thermometer, test by dropping a pinch of flour in oil — it should sizzle and float immediately.

Fry calamari in small batches (about 6–8 pieces at a time depending on pot size) so oil temperature stays close to 350°F. Each batch will take 1 to 1 1/2 minutes: fry until pale golden and just crisp. Overcooking causes rubbery calamari, so remove promptly when golden.

Use a slotted spoon or spider to transfer fried calamari to a paper towel–lined baking sheet. Season immediately with a light pinch of salt.

If necessary, bring oil back up to temperature between batches. For longer service, keep finished calamari on a wire rack in a 200°F (95°C) oven to stay warm and maintain crispness, but do not hold for more than 15–20 minutes.
To Serve

Arrange fried calamari on a platter, garnish with chopped fresh parsley if desired, and serve with lemon wedges and 1/2 cup marinara or tartar sauce for dipping. Squeeze lemon over calamari immediately before eating.
