Prep conch
If using fresh conch, clean and trim: remove any tough membrane, then finely chop the meat into small, bite-size pieces (aim for about 1/4-inch dice). If using frozen, fully thaw, pat dry with paper towels, and then finely chop. Place chopped conch in a medium mixing bowl.

Make batter
To the bowl with the chopped conch, add the sautéed or raw vegetables, minced garlic, parsley, scallion, and jalapeño. Stir in 3 tablespoons flour and 1 teaspoon baking powder. In a separate small bowl, whisk the beaten egg with 1/2 cup milk, Worcestershire sauce, hot sauce, sugar, salt, and black pepper. Pour the wet mixture into the conch mixture and fold to combine. The mixture should be moist but thick enough to hold shape; if very wet, add up to 1 tablespoon additional flour. Let sit 5–10 minutes to hydrate.

Heat oil
Pour vegetable oil into a deep heavy skillet or saucepan to a depth of about 1 1/2 inches (approximately 3–4 cups depending on vessel). Heat oil over medium-high to 350°F (175°C). If you don't have a thermometer, test by dropping a small pinch of batter—if it sizzles and browns in about 45–60 seconds, oil is ready.

Fry fritters
Using two spoons or a small scoop, drop heaping tablespoonfuls of batter into the hot oil, leaving space between fritters. Fry in batches to avoid overcrowding. Cook 2–3 minutes per side, flipping once, until golden brown and cooked through. Adjust heat as needed to maintain 325–350°F. Remove fritters with a slotted spoon to a wire rack or paper towel-lined plate to drain. Repeat until all batter is used.

Finish and serve
Season lightly with extra salt while still warm if desired. Serve hot with lemon wedges and the optional zesty remoulade or your preferred dipping sauce.
Optional Dipping Sauce (Zesty Remoulade)

Whisk together mayonnaise, ketchup, Dijon mustard, hot sauce, chopped capers (or relish), lemon juice, paprika, and salt in a small bowl until smooth. Taste and adjust seasoning — add more hot sauce for heat or a little more lemon for brightness. Chill until ready to serve.
