Slice each chicken breast horizontally to make two thinner cutlets (or use a single thin breast). Place between two pieces of plastic wrap and gently pound to an even thickness of about 1/2 inch. Trim any large uneven edges.

Marinate
Place the pounded chicken pieces into a resealable bag or shallow dish and pour the marinade over them, ensuring they are fully coated. Refrigerate for at least 30 minutes and up to 4 hours. The pickle juice tenderizes and flavors the chicken.

Prepare Breading
In a shallow bowl or pie dish combine all-purpose flour, powdered sugar, salt, black pepper, garlic powder, paprika, and cornstarch. Whisk to mix and break up any lumps.

Dredge Chicken
Remove one piece of marinated chicken at a time, letting excess marinade drip off. Dredge thoroughly in the flour mixture, pressing the flour into the chicken so it adheres. Shake off excess and place on a wire rack. Repeat for remaining pieces. For extra-crispy coating, dip breaded pieces back into the leftover marinade briefly and re-dredge in the flour mixture (optional).

Pour oil into a heavy-bottomed skillet, Dutch oven, or deep fryer to reach a depth of about 1 to 1.5 inches. Heat oil over medium-high heat to 350°F (175°C). If you don't have a thermometer, test with a small pinch of flour — it should sizzle immediately but not burn.

Working in batches to avoid crowding, carefully lower breaded chicken into hot oil. Fry until golden brown and cooked through, about 3–4 minutes per side depending on thickness. Use an instant-read thermometer inserted into the thickest part to ensure 165°F (74°C) internal temperature. Transfer to a wire rack set over a baking sheet to drain and keep crisp.
