    Chill and prepare

    Chill a stemmed wine glass or flute in the freezer for 5–10 minutes, or fill it with ice water while you prepare the cocktail. If using a large ice cube, set it aside to keep the glass cold until serving.

    Combine base ingredients

    In a cocktail shaker, add the gin, fresh lemon juice, simple syrup, and orange bitters. Fill the shaker with the measured ice (about 1 cup).

    Shake and strain

    Shake vigorously for about 12–15 seconds until the shaker is cold to the touch and slightly frosted. This both chills and slightly dilutes the gin mixture for balance. Double-strain the mixture into the chilled glass (or flute) using a Hawthorne strainer and a fine mesh strainer to remove small ice shards.

    Top with cava

    Slowly pour the chilled cava (about 1 cup) down the side of the glass to preserve bubbles and create a gentle layer. Pouring slowly also prevents excessive foaming.

    Garnish and serve

    Twist a lemon peel over the drink to express the oils, then rub the peel around the rim and drop it into the glass as garnish. Serve immediately while effervescent.

    Notes

    Adjust lemon juice and simple syrup to taste if you prefer more bright citrus or slightly sweeter. Use a dry cava (Brut) for a crisp finish; a Reserva or Gran Reserva will add richer flavors. Replace gin with vodka for a lighter botanical profile.
