Root Beer Float (A&W style)

Method

Root Beer Float (A&W style)

  1. 1

    Chill glasses

Place the tall glasses in the refrigerator or freezer for at least 10–15 minutes to ensure they are cold. Cold glasses slow foam and keep the float chillier longer.

  2. 2

    Add ice cream

Place one heaping scoop (about 1/2 cup) of vanilla ice cream into each chilled glass. For a richer float use 1 to 1.5 scoops (approximately 1/2–3/4 cup) per serving depending on glass size and preference.

  3. 3

    Pour root beer

Tilt the glass slightly and slowly pour about 6 fl oz of very cold A&W root beer over the back of a spoon onto the side of the glass so the foam develops gently. Pause to allow foam to settle, then continue pouring until the glass is nearly full (about 24 fl oz total per 4 servings, roughly 6 fl oz per float). Leave space for foam and garnish.

  4. 4

    Finish and serve

Top each float with a tablespoon of whipped cream if desired and a maraschino cherry. Insert a long spoon or straw and serve immediately while foam is lively and ice cream is still scoopable.

Coldware & garnish

  1. 5

Use long-handled spoons or wide straws so guests can scoop softened ice cream and enjoy the creamy soda mixture. If glasses were frozen, do not leave floats in the freezer—serve immediately to avoid over-thickening or glass cracking.
