Crust Preparation

Make the Dough
In a mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Add Water
Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Do not overmix.

Chill the Dough
Shape the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Plums
In a large bowl, combine the sliced plums, granulated sugar, vanilla extract, ground cinnamon, brewed Earl Grey tea, and cornstarch. Toss gently to coat the plums evenly.

Preheat the Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Roll Out the Dough
On a floured surface, roll out the chilled dough into a circle about 12 inches in diameter.

Transfer the rolled dough to the prepared baking sheet. Spoon the plum filling into the center of the dough, leaving a 2-inch border around the edges.
