Method

Crust Preparation

  1. 1

    Make the Dough

In a mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

  2. 2

    Add Water

Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Do not overmix.

  3. 3

    Chill the Dough

Shape the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Filling Preparation

  1. 4

    Prepare the Plums

In a large bowl, combine the sliced plums, granulated sugar, vanilla extract, ground cinnamon, brewed Earl Grey tea, and cornstarch. Toss gently to coat the plums evenly.

Assembling and Baking

  1. 5

    Preheat the Oven

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. 6

    Roll Out the Dough

On a floured surface, roll out the chilled dough into a circle about 12 inches in diameter.

  3. 7

    Add the Filling

Transfer the rolled dough to the prepared baking sheet. Spoon the plum filling into the center of the dough, leaving a 2-inch border around the edges.

  4. 8

    Fold the Edges

Fold the edges of the dough over the filling, pleating it as you go to create a rustic look.

  5. 9

    Bake the Galette

Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the plums are bubbly.

Serving

  1. 10

    Serve with Toppings

Allow the galette to cool slightly before slicing. Serve warm with a dollop of crème fraîche drizzled with honey.
