Preparation

  1. 1

    Trim the Ribs

Remove excess fat from the beef ribs using a sharp knife, leaving a thin layer for flavor.

  2. 2

    Prepare the Dry Rub

In a bowl, combine brown sugar, paprika, garlic powder, onion powder, ground black pepper, salt, and cayenne pepper. Mix well until fully combined.

  3. 3

    Apply the Rub

Generously apply the dry rub mixture all over the beef ribs, ensuring all surfaces are coated. Wrap the ribs in plastic wrap and refrigerate for at least 4 hours, or overnight for better flavor.

Smoking

  1. 4

    Prepare the Smoker

Soak the wood chips in water for at least 30 minutes before smoking. Preheat your smoker to 225°F (107°C).

  2. 5

    Add the Ribs

Remove the ribs from the refrigerator and unwrap them. Place the ribs in the smoker bone side down.

  3. 6

    Add Wood Chips

Add the soaked wood chips to the smoker box or directly on the coals, if using a charcoal smoker.

  4. 7

    Smoke the Ribs

Smoke the ribs for about 5 to 6 hours, or until the internal temperature reaches 203°F (95°C) and the meat is tender. Check the smoker every hour and add more wood chips as needed.

Serving

  1. 8

    Rest the Ribs

Once the ribs are done, remove them from the smoker and let them rest for at least 15-20 minutes before slicing.

  2. 9

    Slice and Serve

Using a sharp knife, slice between the bones to cut the ribs into individual portions. Serve with your favorite barbecue sauce, if desired.
