Main Ingredients

Method

Preparation

  1. 1

    Prepare the Bacon

Lay the bacon strips out on a large cutting board or baking sheet. If the bacon is thick-cut, consider cutting it in half to ensure even cooking.

  2. 2

    Make the Rub

In a small bowl, mix together the black pepper, brown sugar, paprika, garlic powder, onion powder, and salt until well combined.

  3. 3

    Season the Bacon

Sprinkle the rub evenly over both sides of the bacon strips, pressing lightly to adhere. Let the seasoned bacon sit for about 30 minutes at room temperature to allow the flavors to penetrate.

Smoking

  1. 4

    Prepare the Smoker

Soak the wood chips in water for about 30 minutes, then drain. Preheat your smoker to 225°F (107°C). Add the soaked wood chips to the smoker box or directly onto the coals.

  2. 5

    Smoke the Bacon

Place the seasoned bacon strips on the smoker grates, ensuring they are not overcrowded. Close the smoker lid and smoke for 2 to 3 hours, or until the bacon reaches an internal temperature of 150°F (65°C).

  3. 6

    Cool and Store

Once the bacon is smoked, remove it from the smoker and let it cool on a wire rack. After cooling, you can store the smoked bacon in an airtight container in the refrigerator for up to a week or freeze for longer storage.
