Preparation

Prepare the Shrimp
Rinse the shrimp under cold water and pat them dry with paper towels. Set aside.

Make the Batter
In a large mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Whisk together until well combined.

Add Sparkling Water
Gradually pour in the cold sparkling water into the dry ingredients while whisking until the batter is smooth and has no lumps.
Frying

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Dredge the Shrimp
Dip each shrimp into the batter, allowing excess to drip off before carefully placing them into the hot oil.

Fry the Shrimp
Fry the shrimp in batches, avoiding overcrowding the pan. Fry for about 2-3 minutes or until golden brown, turning occasionally for even cooking.

Drain the Shrimp
Once cooked, remove the shrimp from the oil and place them on a plate lined with paper towels to drain excess oil.
