Dough Preparation

    Mixing the Dough

    In a large mixing bowl, combine the rye flour, bread flour, and salt. In a separate bowl, mix the sourdough starter with the water until well combined. Gradually add the wet mixture to the dry ingredients, stirring until a shaggy dough forms.

    Kneading

    Transfer the dough onto a floured surface and knead for about 10 minutes until the dough is smooth and elastic. If the dough is too sticky, sprinkle a little more flour as needed.

    First Rise

    Place the kneaded dough into a lightly greased bowl, cover with a damp cloth, and let it rise at room temperature for about 4 hours, or until it has doubled in size.

    Shaping the Dough

    After the first rise, gently deflate the dough and transfer it to a floured surface. Shape the dough into a round loaf by folding the edges towards the center and then flipping it over.

    Second Rise

    Place the shaped dough into a well-floured proofing basket. Cover with a cloth and let it rise for another 2 hours at room temperature.

    Preheating the Oven

    About 30 minutes before baking, preheat your oven to 230°C (450°F) with a Dutch oven or baking stone inside.

    Scoring and Baking

    Once the oven is hot, carefully remove the Dutch oven, place the dough inside, and score the top with a sharp knife to allow for expansion. Cover and bake for 30 minutes. Then remove the lid and bake for an additional 15-20 minutes until the crust is deep brown.

    Remove the bread from the oven and let it cool on a wire rack for at least 1 hour before slicing.

    Preparing the Butter

    In a mixing bowl, soften the unsalted butter at room temperature. Add the sea salt and finely chopped fresh herbs to the butter.

    Using a fork or a spatula, mix the butter until all ingredients are well combined and the butter is smooth.

    Chilling

    Transfer the butter mixture onto a piece of parchment paper. Roll it into a log shape and refrigerate until firm, about 1 hour.

    Once the butter is firm, slice into rounds to serve alongside the rye sourdough for a delightful pairing.
