Ribeye Steak

Prepare the Steak
Remove the ribeye steaks from the refrigerator and allow them to come to room temperature for about 30 minutes. This ensures even cooking.

Generously season both sides of the ribeye steaks with salt and black pepper.

Rest the Steak
Remove the steaks from the skillet and let them rest for 5-10 minutes before slicing.

Make the Chimichurri
In a bowl, combine chopped parsley, oregano, minced garlic, red wine vinegar, rendered beef fat, olive oil, salt, and black pepper. Mix well until combined.

Allow the chimichurri to sit for at least 15 minutes to let the flavors meld together.
