In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

In a separate bowl, whisk together the milk, egg, melted unsalted butter, and vanilla extract until smooth.

Pour the wet ingredients into the bowl with the dry ingredients. Gently fold the mixtures together until just combined. Do not overmix; it's okay if there are some lumps.

Preheat a non-stick skillet or griddle over medium heat. Lightly grease with a bit of butter or cooking spray.

Using a ladle, pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
