    Prepare the Herbs

    Rinse the fresh lovage and mint leaves under cold water to remove any dirt or impurities. Pat them dry with a clean kitchen towel or paper towel.

    Boil the Water

    In a medium saucepan, bring 4 cups of water to a boil over high heat.

    Steep the Herbs

    Once the water is boiling, remove the saucepan from heat. Add the rinsed lovage and mint leaves to the hot water. Cover the saucepan and let the herbs steep for 10 minutes.

    Strain the Tonic

    After 10 minutes, use a fine mesh strainer to strain the herb-infused water into a large pitcher, discarding the solid leaves.

    Add Sweetness and Flavor

    Stir in 2 tablespoons of honey and 3 tablespoons of fresh lemon juice into the strained liquid. Mix well until the honey is fully dissolved.

    Add Ginger and Spice

    Add 1 teaspoon of grated fresh ginger and a pinch of black pepper to the mixture. Stir until well combined.
