Crust

Prepare the Crust
In a mixing bowl, combine the all-purpose flour and granulated sugar. Add the chilled butter and mix until the mixture resembles coarse crumbs.

Add Egg Yolk and Water
Stir in the egg yolk and ice water until the dough comes together. Do not overmix.

Chill the Dough
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Make the Lemon Filling
In a medium saucepan, whisk together the granulated sugar, eggs, lemon juice, lemon zest, melted butter, and cornstarch. Cook over medium heat, stirring constantly until the mixture thickens, about 5-7 minutes.

Fill the Crust
Pour the lemon filling into the pre-baked crust, spreading it evenly. Bake in the oven for an additional 10-15 minutes until set.
Meringue

Prepare the Meringue
In a clean mixing bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar and continue beating until stiff peaks form. Mix in the cream of tartar and vanilla extract.

Top the Lemon Filling
Spread the meringue over the lemon filling, making sure to seal the edges to prevent shrinking.

Bake the Meringue
Bake at 350°F (175°C) for 10-15 minutes, or until the meringue is golden brown.

Once the tart has cooled, top with mixed fresh berries before serving.
