Salad Preparation

  1. 1

    Prepare the vegetables

Wash the ripe tomatoes thoroughly under cold running water. Cut them into bite-sized pieces and place them in a large salad bowl.

  2. 2

    Add cucumber

Peel the cucumber if desired, then slice it in half lengthwise. Remove the seeds with a spoon, and slice it into half-moons. Add the cucumber slices to the bowl with the tomatoes.

  3. 3

    Slice the onion

Peel the red onion and slice it thinly. Add the onion slices to the salad bowl.

Dressing Preparation

  1. 4

    Mix the dressing

In a small bowl, combine the olive oil, red wine vinegar, Dijon mustard, honey, salt, and black pepper. Whisk together until well combined and emulsified.

Assembling the Salad

  1. 5

    Combine salad and dressing

Pour the dressing over the salad mixture in the bowl. Toss gently to ensure all the vegetables are well coated with the dressing.

  2. 6

    Garnish the salad

Tear the fresh basil leaves and sprinkle them over the top of the salad. Crumble the feta cheese on top of the salad for added flavor.

  3. 7

    Serve

Serve the salad immediately while fresh, or refrigerate for up to 30 minutes to allow the flavors to meld.
