    Harvesting Grapes

    Select ripe Encruzado grapes, ensuring they are free from rot and disease. Aim for about 600g of fresh grapes.

    Crushing Grapes

    Wash the grapes thoroughly under running water. Crush the grapes gently to release their juice. You can use a grape crusher or do this manually.

    Preparing Must

    In a fermentation vessel, combine the crushed grapes, water, sugar, and acid blend. Stir well to ensure the sugar is dissolved.

    Adding Yeast

    Sprinkle the wine yeast over the must. Do not stir immediately; let it sit for about 10 minutes to activate.

    Fermentation

    Cover the fermentation vessel with a clean cloth and let it sit at room temperature for about 1-2 weeks, stirring daily. Monitor the fermentation process; bubbling should be evident.

Aging

    Transfer to Oak Barrels

    Once fermentation is complete (specific gravity remains stable), transfer the wine carefully into oak barrels for aging. Use a siphon to avoid disturbing the sediment.

    Fining the Wine

    Add bentonite to the wine in the barrel. This will help clarify the wine by removing unwanted particles. Stir gently to mix.

    Aging Period

    Seal the barrels and let the wine age for at least 6 months. Taste periodically to check for flavor development.

    Once the desired aging is achieved, transfer the wine into clean bottles, seal with corks, and label accordingly.
