Pastry Preparation

    Prepare the Dough

    In a large mixing bowl, combine 4 cups of all-purpose flour, 2 teaspoons of active dry yeast, 2 tablespoons of granulated sugar, and 1 teaspoon of salt. Mix well.

    Incorporate Liquid Ingredients

    Warm 1 cup of whole milk until it's lukewarm (about 110°F or 45°C). Add the warm milk and 1 large egg to the dry ingredients. Mix until the dough comes together.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until it's smooth and elastic. Place it in a greased bowl, cover with plastic wrap, and let it rise in a warm place for about 1 hour or until doubled in size.

    Prepare the Butter Layer

    While the dough is rising, prepare the butter layer. Take 1 cup of unsalted butter and place it between two sheets of parchment paper. Use a rolling pin to pound it into a flat rectangle, about 1/2 inch thick. Refrigerate until firm.

    Laminate the Dough

    Once the dough has risen, roll it out on a floured surface into a large rectangle. Place the chilled butter layer in the center and fold the dough over it, sealing the edges. Roll the dough out again and fold it into thirds. Repeat this process 3 times, refrigerating for 30 minutes between each fold.

Forming Croissants

    Shape the Croissants

    After the final folding and chilling, roll the dough out into a large rectangle again. Cut it into triangles. Starting from the base, roll each triangle tightly toward the tip to form a croissant shape.

    Second Rise

    Place the shaped croissants on a baking sheet lined with parchment paper. Cover loosely with plastic wrap and let them rise in a warm place for another 30-45 minutes.

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Bake the Croissants

    Once the croissants have puffed up, bake them in the preheated oven for 15-20 minutes or until golden brown. Remove from the oven and let cool slightly.

Make the Seasonal Preserve

    Prepare the Fruit

    Chop 2 cups of seasonal fruit (strawberries, peaches, or apricots) and place them in a saucepan.

    Cook the Preserve

    Add 1 cup of sugar and 2 tablespoons of lemon juice to the chopped fruit. Cook over medium heat, stirring frequently, until the mixture thickens (about 15-20 minutes).
