Method

Fondant Preparation

  1. 1

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until completely melted and smooth. Remove from heat and let it cool slightly.

  2. 2

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar and eggs until the mixture is pale and slightly thickened.

  3. 3

    Combine Mixtures

Gradually add the melted chocolate and butter mixture to the egg and sugar mixture, mixing continuously to combine. Add vanilla extract and a pinch of salt, stirring well.

  4. 4

    Add Flour

Sift in the all-purpose flour and gently fold it into the chocolate mixture until just combined. Be careful not to overmix.

  5. 5

    Prepare Ramekins

Preheat your oven to 200°C (400°F). Grease four ramekins with butter and dust lightly with flour, tapping out any excess.

  6. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 3/4 full. Place the ramekins on a baking tray.

  7. 7

    Bake Fondants

Bake the fondants in the preheated oven for about 10-12 minutes, or until the edges are set but the center is still soft.

  8. 8

    Rest and Serve

Remove the fondants from the oven and let them rest for 1 minute. Carefully invert each ramekin onto a plate to release the fondant. Serve warm with a scoop of vanilla ice cream on top.
