    Prepare the Beef

    Start by trimming any excess fat from the beef tenderloin. Using a sharp knife, dice the beef into very small cubes, approximately 1/4 inch in size. Transfer the diced beef to a mixing bowl.

    Mix Ingredients

    To the bowl of diced beef, add the Dijon mustard, Worcestershire sauce, olive oil, salt, and black pepper. Gently fold these ingredients into the beef using a spatula, ensuring that everything is evenly incorporated.

    Add Capers, Chives, and Cornichons

    Carefully fold in the capers, finely chopped chives, and finely chopped cornichons into the beef mixture. Be gentle to maintain the texture of the beef.

    Plate the Tartare

    Using a ring mold or simply a spoon, shape the beef tartare mixture onto a plate. Make a small indentation in the center of the tartare to hold the egg yolk.

    Add Egg Yolk

    Gently place the egg yolk into the indentation you created in the tartare.
