1. Cook the Pasta
In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.
2. Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
3. Add the Seasonal Vegetables
Add the bell peppers, zucchini, carrots, and broccoli to the skillet. Sauté for about 5-7 minutes until the vegetables are tender.
4. Combine Pasta and Vegetables
Add the cooked pasta and cherry tomatoes to the skillet. Toss gently to combine all ingredients.
5. Season and Serve
Season with salt and black pepper to taste. Serve hot, topped with grated Parmesan cheese.
