Bread Preparation

Activate Yeast

In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

Mix Ingredients

In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil.

Knead the Dough

Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.

First Rise

Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour or until doubled in size.

Shape and Second Rise

Punch down the dough, shape it into a loaf, and place it in a greased loaf pan. Cover and let it rise for another 30 minutes.

Bake the Bread

Preheat the oven to 375°F (190°C). Bake for 25-30 minutes until golden brown and sounds hollow when tapped.

Prepare the Topping

In a bowl, combine diced tomatoes with salt and pepper to taste.

Serve

Once the bread is baked and cooled slightly, slice it and spread opal basil pesto on top. Add the seasoned tomatoes on top of the pesto.
