Salmon Avocado Sandwich Recipe

Preparation of Ingredients

    Prepare the Avocado

    Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork until smooth. Add lemon juice, salt, and pepper to taste. Set aside.

    Prepare the Tomato

    Wash the tomato and slice it into thin rounds. Set aside.

    Prepare the Salmon

    Season the salmon fillet with salt and black pepper on both sides.

Cooking the Salmon

    Sear the Salmon

    In a skillet, heat olive oil over medium-high heat. Once hot, add the salmon fillet skin-side down. Cook for about 4-5 minutes, until the skin is crispy. Flip the salmon and cook for another 3-4 minutes, or until cooked through. Remove from heat and let rest for a minute.

Assembling the Sandwich

    Toast the Ciabatta

    While the salmon is resting, toast the ciabatta bread slices in a toaster or on a grill until golden brown.

    Build the Sandwich

    Spread a generous amount of the smashed avocado on one side of each toasted ciabatta slice. Place the seared salmon on top of the avocado, followed by a handful of spring mix greens, and then the tomato slices. Top with the second slice of ciabatta, avocado side down.
