Pulled Pork Preparation

Prepare the Pork
Trim excess fat from the pork shoulder and cut it into large chunks.

Make the Rub
In a bowl, mix together the smoked paprika, brown sugar, salt, black pepper, and cayenne pepper. Rub this mixture all over the pork chunks.

Cook the Pork
Place the pork in a slow cooker. Add the chopped onion, minced garlic, apple cider vinegar, and water. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker to absorb the juices.

Combine Ingredients
In a saucepan, mix together the ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and black pepper.

Cook the Sauce
Simmer the sauce over medium heat for about 15 minutes, stirring occasionally until it thickens slightly.

Mix with Pulled Pork
Once the sauce is ready, stir it into the shredded pork in the slow cooker. Let it cook for an additional 10 minutes to meld the flavors.
Assembly

Toast the Buns
Lightly toast the hamburger buns on a grill or in a toaster.

Assemble the Sandwiches
Spoon a generous amount of the pulled pork onto the bottom half of each bun. Top with coleslaw if desired.

Place the top half of the bun on the pulled pork and serve immediately.
