    Activate Yeast

    In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until foamy.

    Make Dough

    In a large mixing bowl, combine flour and salt. Add the yeast mixture and melted unsalted butter. Mix until a dough starts to form.

    Knead Dough

    Turn the dough onto a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

    Shape Pretzel Bites

    Once risen, punch down the dough and divide it into 8 equal pieces. Roll each piece into a rope about 1 inch thick and cut into 1-inch pieces.

    Boil Pretzel Bites

    In a large pot, bring 10 cups of water to a boil. Add the baking soda. Boil the pretzel bites in batches for about 30 seconds, then remove with a slotted spoon.

    Bake Pretzel Bites

    Place the boiled pretzel bites on a baking sheet lined with parchment paper. Sprinkle with coarse sea salt. Bake in a preheated oven at 425°F (220°C) for 12-15 minutes or until golden brown.

Cheese Dip

    Combine Ingredients

    In a medium saucepan over medium heat, combine the shredded cheddar cheese, cream cheese, milk, garlic powder, and cayenne pepper.

    Melt Cheese

    Stir continuously until the cheese is melted and the mixture is smooth. Add salt to taste.

    Serve

    Remove from heat and serve warm with pretzel bites.
