Charred Lime & Chive Aioli

Frying Brussels Sprouts

Prepare the Brussels Sprouts
Rinse the Brussels sprouts under cold water. Trim the stem ends and remove any yellow or wilted leaves. Cut each sprout in half lengthwise.

Season the Sprouts
In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and black pepper until evenly coated.

Heat the Oil
In a large skillet, heat about 1/4 inch of olive oil over medium-high heat until shimmering.

Fry the Brussels Sprouts
Carefully add the Brussels sprouts cut-side down in a single layer. Fry for about 5-7 minutes until the cut sides are golden brown and crispy. Flip and cook for an additional 3-5 minutes until the other side is browned.

Drain and Keep Warm
Using a slotted spoon, transfer the fried Brussels sprouts to a paper towel-lined plate to drain excess oil. Keep warm while preparing the aioli.
Making Charred Lime & Chive Aioli

Char the Lime
Preheat a grill pan or outdoor grill over medium-high heat. Cut the lime in half and place cut-side down on the grill. Cook for about 2-3 minutes until charred. Remove from heat and let cool slightly.

Prepare the Aioli
In a bowl, combine the mayonnaise, lime juice, chopped chives, and minced garlic. Squeeze the juice from the charred lime halves into the mixture, being careful to catch any seeds.

Mix Well
Stir the ingredients together until well combined. Taste and adjust seasoning if needed.
