Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust them lightly with flour.

  2. 2

    Melt Chocolate and Butter

In a medium saucepan, combine the unsalted butter and semisweet chocolate chips. Melt over low heat, stirring constantly until smooth. Remove from heat.

  3. 3

    Mix Sugar and Eggs

In a mixing bowl, whisk together granulated sugar, large eggs, and large egg yolks until well combined and slightly thickened.

  4. 4

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture while whisking continuously. Add vanilla extract and mix until smooth.

  5. 5

    Add Flour and Salt

Sift the all-purpose flour and salt into the chocolate mixture. Gently fold until just combined.

Baking

  1. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  2. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

  3. 8

    Cool Slightly

Remove from the oven and let the cakes sit for 1 minute. Carefully run a knife around the edges to loosen them from the ramekins.

Serving

  1. 9

    Invert and Serve

Carefully invert each ramekin onto a dessert plate. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream.
