Crust Preparation

Prepare the Crust
In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until the mixture resembles wet sand.

Pre-bake the Crust
Preheat your oven to 350°F (175°C). Bake the crust in the preheated oven for 10 minutes. Remove and let cool.
Cheesecake Preparation

Mix the Cream Cheese
In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy.

Add Sugar and Vanilla
Gradually add the granulated sugar and vanilla extract, mixing until well combined.

Incorporate Sour Cream and Eggs
Add the sour cream and mix until combined. Then add the eggs one at a time, mixing well after each addition.

Add Flour
Gently fold in the all-purpose flour until just combined. Be careful not to overmix.

Bake the Cheesecake
Pour the cheesecake mixture over the cooled crust. Bake in the oven at 325°F (160°C) for 50-60 minutes, or until the center is set but still slightly jiggly.

Cool the Cheesecake
Turn off the oven and crack the door. Let the cheesecake cool in the oven for an hour before transferring it to the fridge to chill for at least 4 hours, or overnight.

Cook the Topping
Cook over medium heat until the berries start to break down and release their juices, about 5-7 minutes. Remove from heat and let cool.

Top the Cheesecake
Once the cheesecake is chilled, pour the berry topping over the cheesecake before serving.
