Pulled Pork Preparation

Prepare the Pork
Trim any excess fat from the pork shoulder and cut it into large chunks.

Season the Pork
In a small bowl, mix together smoked paprika, brown sugar, salt, black pepper, and cayenne pepper. Rub this mixture all over the pork pieces.

Cook the Pork
Place the pork in a slow cooker. Add chopped onion, minced garlic, apple cider vinegar, and water. Cover and cook on low for 8 hours or until the pork is tender and shreds easily.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the cooker and mix in the BBQ sauce. Let it warm for an additional 30 minutes.

Prepare the Vegetables
Shred the green cabbage and grate the carrot.

Make the Dressing
In a large bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper.

Combine and Chill
Add the shredded cabbage and carrot to the dressing. Toss to coat thoroughly and refrigerate for at least 30 minutes before serving.

Assemble the Sandwich
Toast the brioche buns lightly if desired. Place a generous portion of BBQ pulled pork on the bottom half of each bun, top with coleslaw, and cover with the top half of the bun. Serve immediately.
