Fritter Preparation
Prepare the Cauliflower
Steam or boil the cauliflower florets until tender, about 5-7 minutes. Drain and allow to cool.
Mash the Cauliflower
Once cooled, finely chop or mash the cauliflower florets using a fork or food processor.
Mix the Fritter Batter
In a bowl, combine the mashed cauliflower, chickpea flour, water, green onions, garlic powder, cumin powder, salt, and black pepper. Mix until well combined to form a thick batter.
Heat Oil
In a large skillet, heat olive oil over medium-high heat for frying the fritters.
Fry the Fritters
Using a tablespoon, drop spoonfuls of the batter into the hot oil. Fry for about 3-4 minutes on each side or until golden brown and crispy. Drain on paper towels.
Apricot Harissa Sauce Preparation
Combine Ingredients
In a small saucepan, combine the chopped dried apricots, harissa paste, lemon juice, water, and salt.
Cook the Sauce
Heat the mixture over medium heat, stirring occasionally until the apricots soften and the sauce thickens, about 5-7 minutes.
Blend the Sauce
Remove from heat and let cool slightly, then blend until smooth using a blender or immersion blender.
Serve
Drizzle the apricot harissa sauce over the cauliflower fritters before serving.
