Prepare and dry chickpeas
Preheat oven to 425°F (220°C). After draining and rinsing the chickpeas, spread them on a clean kitchen towel or paper towels and gently pat dry. For extra crispiness, remove any loose skins by rubbing lightly; discard skins that come off.
Roast chickpeas
Toss the dried chickpeas with 2 tbs olive oil, ras el hanout, smoked paprika, 1/2 tsp salt, and 1/4 tsp black pepper in a bowl until evenly coated. Spread in a single layer on a rimmed baking sheet lined with parchment, leaving space between beans so they roast rather than steam.
Bake until crisp
Roast in the preheated oven for 25–35 minutes, shaking the pan or stirring every 8–10 minutes to encourage even browning. Start checking for doneness at 20 minutes—chickpeas should be deeply golden and crisp on the outside. If some are still soft, continue roasting in 3–5 minute increments. Once crisp, remove from oven and let cool on the pan; they will firm up further as they cool.
Toum (Garlic Emulsion) — quick version
Make quick toum
In a small blender or food processor, combine the peeled garlic cloves and 1/2 tsp salt. Pulse briefly until garlic is roughly chopped. With the motor running, add the lemon juice in a thin steady stream, then add the neutral oil very slowly in a steady stream (about 10–15 seconds per tablespoon) until the mixture emulsifies into a thick, creamy sauce. If too thin, add another tablespoon of oil. Taste and adjust salt or lemon. (Note: for best emulsification, use very fresh garlic and keep ingredients at room temperature.)
Finishing & Serve
Plate the cooled crispy chickpeas in a shallow bowl or on a platter. Dollop 1–2 tbs of the toum around or lightly toss the chickpeas with a small spoonful if you prefer them lightly coated.
Sprinkle the Aleppo pepper evenly over the chickpeas, then scatter the chopped dill and lemon zest on top. Serve immediately with lemon wedges on the side for a bright squeeze over the chickpeas.
Storage: Store leftover crispy chickpeas in an airtight container at room temperature for up to 2 days (they lose crispness over time). Keep any extra toum refrigerated for up to 5 days.
