Method

Preparing the Fries

  1. 1

    Cut the Potatoes

Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick, to create fries.

  2. 2

    Soak the Potatoes

Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and make the fries crispier.

  3. 3

    Dry the Potatoes

After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

  4. 4

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature.

  5. 5

    Fry the Potatoes

Carefully add small batches of the dried potatoes to the hot oil. Fry them for about 5-7 minutes, or until they are golden brown and crispy. Remove with a slotted spoon and place on paper towels to drain.

  6. 6

    Season the Fries

While the fries are still hot, sprinkle them with salt to taste.

Preparing the Truffle Mixture

  1. 7

    Mix Truffle Oil and Parmesan

In a large bowl, combine the hot fries with the truffle oil and grated Parmesan cheese. Toss until the fries are evenly coated.

  2. 8

    Add Seasoning

Sprinkle in the freshly ground black pepper and chopped parsley. Toss again to incorporate all ingredients well.

Serving

  1. 9

    Serve Immediately

Transfer the truffle Parmesan fries to a serving dish and serve hot, garnished with additional parsley if desired.
